4 sea bream fillets
Salt and pepper to taste
Extra-virgin olive oil to taste
Heat a pan with a drizzle of oil and then arrange the sea bream fillets, skin side down. Cook over medium heat for 3-4 minutes until the skin is gold and crispy. Add a pinch of salt and pepper. Turn over and cook for another minute. Serve immediately with a teaspoon of citrus fruit pesto for each fillet.
