It is a sauce made of artichoke hearts that can be put to various uses. It can be diluted with oil to accompany boiled or grilled meats. It can be mixed with cheese, as well as mascarpone or mayonnaise, to fill panini, tarts, sandwiches, crostini, bruschettas or vol-au-vents. If used like this, it can also serve as a topping for pizzas or pasta. Excellent combined with: ham, salami, smoked cured meats, fresh cheeses such as fontina or emmenthal, and dried tomatoes.

Cut discs of sandwich bread with a round pastry cutter.
Spread the discs of bread with the Speciality Mayonnaise and then spread Black Olive Cream on some of the discs and Tuna Fish Cream on others and Carciofella on the remaining sandwiches.
Decorate the savouries with the Black Olive Cream with an anchovy, a cube of fresh tomato and chopped parsley; the savouries with Tuna Cream with tuna in oil, cubes of tomato and parsley, and the savouries with the artichoke sauce with a piece of cooked ham and a cube of tomato.
Serve on a serving plate.
