Excellent sauce made of finely chopped vegetables, mainly used to accompany boiled or grilled meat or vegetables, but also excellent in panini and toasted or cold sandwiches both used as it is and lengthened with mayonnaise or soft cheese.

Ingredients:
Mixed vegetables (carrot, onion, peppers, celery, turnip, fennel, cauliflower, cucumbers, green tomato) (65%), olive oil, wine vinegar, white wine, salt, sugar, tomato pulp, aromatic herbs, tomato concentrate, aromas.

Cotechino (spiced pork sausage)

Tongue of veal

Heads of veal

Pork trotter

Beef

Celery

Carrot

Onion

Salt

Green Sauce

Vegetella sauce

 

 

Preparation:

Cook the boiled meats with the vegetables. Flavour them separately and add salt when they are half-cooked.

Once cooked, remove them from the cooking liquid, place them on a serving plate and serve with Green Sauce and Vegetella sauce.
