Tripe it is a product ready to heat up and serve with a sprinkling of grated parmesan or accompanied by polenta or chunks of boiled potatoes. As well as for a main course, we can also use it with a vegetable minestrone, or for preparing soup or risotto. To make a stew, add a bit of tomato.

Ingredients:
Beef tripe (61%), water, tomato pulp (6%), mixed vegetables (onion, carrot, celery), sunflower seed oil, white wine, tomato concentrate, type "0" soft wheat flour, salt, grana cheese, aromatic herbs.

"Cucina Antica" Tripe

bay leaves

grated parmesan cheese

 

 

Preparation:

Chop the celery, carrot and onion coarsely and brown them in extra virgin olive oil.

Then add the tripe with some fresh bay leaves and allow to flavour for about 10 minutes.

Serve on a serving plate sprinkled with grated parmesan cheese.
