Soleggiati Tomatoes

"The tomatoes are cultivated in the fertile soils of the beautiful Puglia countryside where the healthy and sunny climate gives them the best in taste and colour. They are harvested daily by hand to prevent machines damaging the texture and to guarantee that only red fruits at the right stage of ripeness are chosen. Then the tomatoes are laid out on special tables. The cut part is put facing the sun for drying. The dried products undergo a further selection process on the conveyor belt, their pH is checked and they are aromatised in basins with oregano and garlic.
Recommended for antipasti, in particular together with cured meats. They can be used to fill hot panini and sandwiches. They can be used as an ingredient in preparing a hot or cold pasta dish. Excellent for adding flavour to baked fish (giltheads or sea bass) while cooking. Ideal as an ingredient for salads. "

Cook the pasta in lots of salted water and drain. Pour a drizzle of extra virgin olive oil into a frying pan and add the cold ingredients. Toss together in the pan for a few minutes and serve.
