Tonné Sauce

Came about as the sauce for veal tonné, but can also be used for panini, sandwiches, canapés, or to accompany boiled meat or fish, etc...

Ingredients:
Sunflower seed oil (69%), egg yolk, wine vinegar, lemon juice, tuna (3.5%), anchovy paste, capers, sugar, salt, olive oil, aromas, balsamic vinegar of Modena, mustard, acidifier: lactic acid, preservative: potassium sorbate, burnt sugar, spices, taste enhancer: monosodium glutamate, sodium 5'-ribonucleotides.

Ingredients:

Veal loin, cleaned and deboned

garlic

sprigs of fresh rosemary

salt

curly parsley

mustard

capers

Tonné Sauce

 

 

Preparation:

Brown the veal loin on all sides, having flavoured it with the mustard.

Then add a splash of white wine and dress it with some salt, garlic and rosemary and carry on baking in the oven, gradually gradually adding the stock to stop it from drying out too much.

Once cooked, remove it from the oven and let it cool completely. Cut it into very fine slices with the slicing machine and place the slices on a serving plate in a herring-bone shape.

Cover the slices of veal loin with the Tonné Sauce and decorate them withswirls of Tonné Sauce, parsley sprigs and washed and dried salted capers.
