Originally an accompaniment for boiled or grilled meat and fish dishes, it also goes very well with eggs cooked in various ways, but we can also use it mixed with mayonnaise or soft cheese for panini, sandwiches and toasted sandwiches.

Ingredients:
Peperoni (34%), prezzemolo, sedano, aceto di vino, cipolla, olio di semi di girasole, capperi, zucchero, pane grattugiato (con glutine), sale, pasta di acciughe, aceto balsamico di Modena, piante aromatiche, olio extravergine di oliva, albume d'uovo, spezie.

1/4 of a hen

Cotechino (spiced pork sausage)

Tongue of veal

Heads of veal

Pork trotter

Beef

Celery

Carrot

Onion

Salt

Green Sauce

Vegetella sauce

 

 

Preparation:

Cook the boiled meats with the vegetables. Flavour them separately and add salt when they are half-cooked.

Once cooked, remove them from the cooking liquid, place them on a serving plate and serve with Green Sauce and Vegetella sauce.
