salsa peverada

Peverada Sauce

200 g n.w. glass jar

Peverada Sauce is a typical Venetian sauce based on chicken livers. It is used diluted in stock with pasta (like taglioline in broth) or in bean stew. We can use it straight out of the jar for crostoni, bruschettas or as a sauce for pasta, perhaps adding a dash of brandy and some tomato or single cream and saffron. We can also use it in rice or by adding some chopped capers and anchovies, we can use it as a topping for slices of toasted Tuscan bread rubbed with garlic and greased with a drop of oil. This will give us a typical Tuscan crostone.
