It is a dense, fragranced and aromatic sauce with a dark red colour and chunks of strawberry. It has an unusual sweet 'n' sour flavour of strawberries and balsamic vinegar. We can combine it with boiled meats or poultry, and it goes very well with mature (pecorino, grana, montasio) or fresh cheeses (ricotta and mascarpone). An unusual combination is with egg-based desserts (custards), pancakes, ice-cream (vanilla) and panna cotta. Try them all to discover the remarkable tastes of this sauce.

Recommended recipe
Ingredients:

"For the pastry cones:
200 g flour
35 g extra virgin olive oil
Salt and water to mix
Mixed sesame, cumin and fennel seeds.
Alternatively use frozen puff pastry.
For the filling:
Cream cheese
Mascarpone
Ricotta
Salsafragola with balsamic vinegar "

Preparation:

"Mix together the ingredients for the cones. Leave the dough to rest, then roll it out as thinly as possible. Cut out some rectangular strips of around 10x15, sprinkle them with seeds and roll them into a cone shape using a steel cone mould.
Cook in the oven at 180°C until they are a golden brown colour. When the cones cool down, fill them with assorted cream cheeses and Salsafragola. It is also possible to use frozen puff pastry rolled out very thinly. "
