Balsamic Vinegar of Modena (aceto balsamico) it is a typical product from Modena, prepared by reducing the must and leaving it to age in oak barrels. It needs to be aged for at least three years and it can be used as a dressing instead of wine vinegar, to make vinaigrette, or in cooking to make typical Modenese main courses. Also excellent to drizzle over tasty pasta dishes to add flavour or as a garnish, or to drizzle over grana or parmesan cheese at the end of a meal. Also ideal on vanilla ice-cream. Superb if used as a dressing for strawberries. It gives its all if savoured with eggs, as they bring out all its flavour.

Wine vinegar, cooked must, colouring agent: E150 d.
Recommended recipe

"For the pastry cones:
200 g flour
35 g extra virgin olive oil
Salt and water to mix
Mixed sesame, cumin and fennel seeds.
Alternatively use frozen puff pastry.
For the filling:
Cream cheese
Salsafragola with balsamic vinegar "


"Mix together the ingredients for the cones. Leave the dough to rest, then roll it out as thinly as possible. Cut out some rectangular strips of around 10x15, sprinkle them with seeds and roll them into a cone shape using a steel cone mould.
Cook in the oven at 180°C until they are a golden brown colour. When the cones cool down, fill them with assorted cream cheeses and Salsafragola. It is also possible to use frozen puff pastry rolled out very thinly. "
